What can this kit do?
Cool down or heat up your experiments with this Peltier cell and power supply. As they contain no moving parts, Peltier cells make silent coolers that are perfect for small projects or additional cooling in equipment. They can also be used as a heater or hotplate. This kit does not involve any soldering and the cell comes attached to wires that clip onto the included battery box.

What can I learn from this kit?
Peltier cells are used in cooling elements for mini fridges, lab instruments and integral circuits (ICs). When a current is passed through the cell one side heats up, removing heat from the other side so that it cools down. You can use this cell with a heatsink or a heat conductive surface to cool down an area. The amount of cooling depends on the transfer of heat from the hot side. This kit does not require soldering.
Caution: take care not to touch the hot side of the cell when it is on.

Given the data you have provided the datasheet suggest that device falls within the operational parameters you have specified.

can it be used the other way around and generate electricity from heat/cold?

The previous answer is incorrect, a Peltier cell can be used in reverse as a thermoelectric generator!

How much does this device cool up to?? In an small enclosed environment?

The Peltier Cell can get incredibly cold, with sufficient heat dissipation on the hot side these can form ice crystals on the cold side, and for example could cool a can of coke, but the amount of colling it would provide would be limited to something in immediate contact, it could not cool a room for example.

I am looking for a cooler to cool down my Canon DSLR camera. What sort of temperature reduction would this give in a small box say 200mmx100mmx80mm. Also is a heat sink provided?

This is simply an educational kit for building a simple cooling/heating system. Full details of the products properties can be found on the datasheet https://maplindownloads.s3-eu-west-1.amazonaws.com/N12JG-Peltier-module-7505.pdf We wouldn't be able to advise as to any usage outside of that environment and would certainly not recommend usage for medical purposes.

What is the maximum voltage this device will tolerate?

6V is not the max, just what 4 AAs supply. Common max Vs of Peltier devices operating above 6V are: 7V6, 9V2 and 15V4. I need a device to operate from a nominal12V supply hence the question. If the data is not immediately available to you can you identify the device so that I can research it please.

Russell, Thanks for your previous answer. Actually I am more interested in the rate of change of temperature. For example, can the peltier cell heat at a rate of 1 deg C per second? Is that possible? Or is it too fast?

This would depend on what cooling you can provide to the hot side, but if ran from a mains power supply it can form ice crystals in the open air, so the temperature change would be at least 30 degrees C approx.
